Our company
Our company was founded in 2015 and our goal is to create limited and unique wines. Pavilion Wines Wine Cellar is located in the historic village of Vachnadziani in Kakheti region, Georgia.
The enterprise equipped with modern technologies, allows us to use both Georgian traditional and classic winemaking.
Every year our wine cellar brings together a limited collection of wines created from the best harvests of endemic grape varieties.
Georgia
Georgia has an 8000-year-old winemaking continuous tradition. There are more than 525 local grape varieties represented here. According to archeological evidence, the first Georgian wine was made and stored in a clay vessel called “Qvevri”.
Wine fermentation in clay pots is one of the oldest methods of winemaking. This ancient traditional Georgian method of winemaking has been granted the status of the intangible cultural heritage of mankind by UNESCO.
Our Wines
Our wines are an unique composition obtained from the best harvest of Georgian endemic grape varieties.
Each wine edition is special and inimitable, created with the combination of grape breeds from the different regions of Georgia every year.
Our wines provide oenophiles in search for new tastes an opportunity to savor interesting flavors of unique Georgian grape varieties.
Wine Production
Differentness of the wines from Pavilion is in the approach to their production, created by the synthesis of unique Georgian grape varieties, modern technological equipment and the knowledge of the artist winemaker.
According to the methodology and quality standard developed by us, we choose the winery micro zone, where a particular variety reveals the best taste qualities.
Throughout the year, we monitor the condition of the vineyards in the selected winery micro zones. As a result of observations:
The composition of the wine is made by the creative combination of the unique properties of different varieties and microzones. The unique composition of the wine is created by an artist winemaker with technological knowledge, experience and creative skills accumulated over the years.
